Duties:
Concerns the overall operation & co-operation of the an asssigned area as per instructed by Executive Chef.
On must have a sound professional knowledge on all aspects related to this operation & position
Co-ordinate in detail all food preparation and production for kitchen department ,to ensure a total smooth runing of the operation.
To ensure that all set with the Executive Chef presentations are up to agreed standards ups and prepared food .
Fully monitor portion control in assigned kitchen areas and that par stocks are kept at a minimum with daily stock and product turn-over, utilizing leftovers where and if possible.
Oversee the receiving area personnel to ensure that the hotel is acquiring all food products
Fully supervise all food tastings, presentations and food samplings in all production phases.
Daily cleanliness checks with the Assistant Chief Steward
Requirements:
Western Cooking, Asian Cooking
Leadership Ability
Personel Management Skills
HACCP
5 Star Hotel and Sous Chef Experience
Thailand Work Experience..
